Hey friends welcome back to freedom homestead. I’m Tangi and I am getting ready to fix a dinner for my family and I have promised to show you guys this recipe it’s a recipe that I absolutely love. The family likes it even though it is a low carb recipe; it’s called Lazy Lasagna. It’s actually a trim healthy mama’s meal. It is a low carb, high fat meal and so I’m gonna bring you in and show you how we put this together this recipe is found on page 140 and the trim healthy mama cookbook. I don’t know what the macros are per serving I’m doing lazy keto so I don’t necessarily track my macros. I just keep everything low carb and watch the portion sizes so alright so this is on page 140. Let’s do this in a skillet over medium-high heat. I’m adding a little bit of avocado oil because I’m gonna be using ground venison as my meat, which is very lean and it needs a little bit of fat to get it going. I’m also adding some chopped onion you can make yours smaller if you’d like. Then, season it and chop up the ground deer or beef whatever you’re using. Once your meat is brown add your sauce and simmer for the filling in my food processor. I am adding 14 ounces of cottage cheese 8 ounces of cream cheese and 2 eggs and you buzz it until it is nice and smooth. The recipe doesn’t call for it but I like to season my cheese mixture with a little bit of onion powder and garlic powder, and then just mix it well. Now it’s time to assemble our lazy lasagna first we’re going to ladle half of our sauce into the bottom of our 9 by 13 dish. I should mention that the oven is preheated to 350 degrees. On top of our meat sauce we’re going to add half of our cheese mixture so half the cheese mixture and again you’re gonna spread it over the top of the meat sauce in the bowl there I have 20 ounces of spinach chopped spinach that has been thawed and I have squeezed all the water out so now. I am just going to sprinkle this on top of my cheese mixture this is a really great way to get your kids to eat their greens this dish is delicious. I’m gonna top it with mozzarella cheese just a little bit and then over top of that we’re going to add the rest of our cheese mixture and spread evenly. Then, on top of that we’re going to put the rest of our meat sauce spread it and then we’re going to top with more mozzarella cheese once we’ve done that we’re going to put it in the oven. This is gonna bake for about 30 to 40 minutes depending on your oven to bake at 40 minutes, but this was done in about 35. So, I’m lazy all right. I already know it’s gonna be incredible but just for kicks and giggles it was awesome okay so if you have a carb loving gremlin like I do, some options for them is to serve some pasta on the side. Maybe like butter; with butter and Parmesan cheese you could also serve bread rolls. Or, whatever any way your family likes it.
